Sips and Light Bites For St. Patrick’s Day
It all started in my final year of Pre-K. My mom picked me out a “green” shirt to wear to school that day and I happily got ready in the morning, ate my cheerios, and hopped in my car seat.
When I got to school, Nikki A. told me that my shirt wasn’t “green enough” and proceeded to pinch me so hard I cried until my teacher brought me an ice pack shaped like a teddy bear.
For the record, the shirt was a light olive and Nikki A. thought she was all that.
Now that I think about it, nothing bad has happened to me on St. Patrick’s Day since the pinching incident of 1999.
To make sure you have a perfect St. Patty’s Day, I’m sharing an easy peezy appitizer recipe with ya’ll today for the #galpallinkup. (There’s also an adult bevarage if you’re 21 and you can stomach whiskey.)
Alrighty….let me break it down for you. These are yummy, green pinwheels for your St. Patty’s day enjoyment.
What you’ll need:
- spinach wraps
- deli meat of your choice (I’m using turkey!)
- lettuce
- tomato
- mayo and/or mustard (I’m just using mustard.)
- cheese (optional, I’m part of that #lactosefree life.)
Time for the special drink! I know it’s super out of character for me to be sharing a drink recipe. For the record, this was Cameron’s go-to when he studied abroad in Ireland this summer, so I can’t take credit. Drink responsibly you twenty-fun-ers!
What you’ll need:
- Jameson whiskey
- Ginger ale
- Ice
- Lime (optional, but that’s how the Irish do it!)
