3 Healthy Lunch Ideas for Work or Home

I have finally set my schedule for next semester (’bout time) and I’m going to try the whole “go to class mainly on Tuesdays and Thursdays” deal. This will allow me a long weekend and the flexibility to schedule flights and trips Friday-Monday.

3 healthy lunch recipes

However, my first thought was, “If I’m up at campus all day Tuesday/Thursday, what am I going to do for lunch?” I ate at the dining hall during orientation and it didn’t have many dairy-free, vegetarian options. Plus, meal plans can be expensive! With a break in classes from 11:30-1, I figured I’d pack my lunch and find a spot to snack.

For today’s post I’m collaborating with Planetbox to show you 3 healthy, easy lunch ideas for work, school, or home! It’s hard to find things that keep well, can fit well in containers, and are filling. Try out these 3 recipes on your lunch break or just when you want a healthy, filling lunch.

Veggie Tacos

I sauté my veggies and heat up my beans in separate pans. Note: You can use whatever beans and veggies you like, but this is my favorite mixture! Once they were done and on my tortillas, I added pico and lettuce. They’re simple, but so delicious and filling! I included some medium red salsa for dipping. You can pack each of the components of this meal (tortillas, veggies, beans, salsa) into a lunch box and then put your tacos together at your work!

Sweet potato with side Market Salad

For a healthy lunch recipe, it’s best to just stick to the basics and keep it simple. I love sweet potatoes because they’re filling and great for you! You can poke yours with a fork a few times, wrap it in parchment paper, and heat it in the microwave for 8 minutes (sorry if you’re against microwaves – haha) while you have your coffee before work. I dice mine so I can fit it in my lunch box.

Another simple healthy lunch dish is a salad. Often times, we get all bummed about salads because they don’t fill us up! That’s why I pack mine full of healthy fats and veggies to keep me full. I’ll chop up veggies and add an avocado in there. (Note: my salad looks a little wilted here because I had made it for dinner the night before – this was leftover!)

veggie pizza

Veggie Tortilla Pizza

When I went dairy free in January 2015 for the sake of my health and skin (bye-bye breakouts!) it really was not that hard for me to give up things like coffee creamer, cheese snacks, and ice cream. The only thing I’ll occasionally crave is pizza! There’s something just so incredibly satisfying about greasy pizza. I’ve taken to making my own healthier version at home. I spread all my desired ingredients (I do a ton of veggies, but you could add cheese, meat, or anything really!) on a whole wheat tortilla. Bake in the oven at 400 for 10-12 min.

planetbox lunch kit

I’m really excited to whip up some simple, healthy lunches and transport it in my Planetbox lunch box. I checked and this fits perfectly into my backpack and is lightweight enough that it won’t bug me walking around campus. Plus, since I’m not transporting everything in plastic baggies, this lunch kit is a whole lot less trash and better for the environment! It’s also dishwasher safe which is perfect for someone like me who hates scrubbing my messes out of dishes.

What’s your favorite healthy lunch for work, school, or home?

  • I had no idea you are dairy-free and a vegetarian! That makes be so, so happy — I’m vegan and whenever other bloggers do “healthy” meals or snacks they always contain so many animal products.

    xx emily

Yeah!! That is super cool that you’re vegan! My sister is a vegan so she and I are always thinking up new recipes and finding new places to eat out at where you can get vegan options 🙂

  • These all look so tasty! I especially love the tacos and salads! Plus Planet Boxes are so cute! They make lunch look so pretty!

    xoxo, Candice

    • cristina

I love that I got a pink one because it’s very me haha…thanks for reading and your comment, girl! 🙂

  • Veggie tacos are my favorite lunch! I work from home and I tend to eat the same things all the time, but I definitely want to incorporate more sweet potato into my diet. I like that these are all super easy to make, too!

    • cristina

Veggie tacos are definitely one of my favorites, too! 🙂

  • All of these lunches look so good! I’m required to be on a meal plan, but like you next semester I’m in class all day (literally nonstop from 8-5) so I’m not sure what I’ll do for lunch!

    • cristina

When I ate at the dining hall, mine had baked potatos and salad (and some other random veggies) so I would normally do that! 🙂

  • These all sound so yummy! I am a big taco lady haha.

    xoxo, Jenny

I love making potatoes and putting cheese and mayo in it! I would have to say my favorite healthy food is whole wheat bread with peanut butter on one slice and honey on the other. Then, bananas are added and sometimes whip cream. It is super good!

    • cristina

Yum! Lately I’ve been having toast with almond butter and honey for a snack – so good!!

  • Great ideas! My college cafeteria had sweet potatoes often so I ate them a lot when I lived on campus- such a healthy and tasty food!

    xoxo A

  • Oh boy, I want to make all of this like, right now. Looks so good!

    -Meagan | lovebymeagan.blogspot.com

  • I keep seeing you post recipes with black beans and I’m trying to work up the courage to try them! (I’m not much of bean person outside of soups for some reason lol) But those tacos look great and I think I’m finally going to try them! Haha

    • cristina

I was convinced I hated them for the first few years of my life, but in Honduras (where my dad is from) they are a staple. My abuela made me try them and I realized they were so good!! I think you really have to buy the right kind though! I get the Goya black refried beans and those are by far the best and most authentic 🙂

  • Oh my gosh, these recipes all look delicious! I keep a running list on my fridge of meals to try, and I’m definitely adding those veggie tacos. Yum!

    • cristina

They are so good! I should start keeping a list of things to try on my fridge – that’s an awesome idea!!

  • Danielle

This sounds so yummy right now, especially after eating pasta and pizza EVERYDAY while in pizza. This is a great meal idea to help me get back eating healthy. Thanks!

    with love, Danielle

  • These all look so delicious! I’d love to try the tacos.

  • Amy

I love tacos and have been on the hunt for a good vegetarian recipe so I can’t wait to try this out! Also, the planet box sounds awesome and may look into getting into one for days I’m on campus all day!

  • That lunch box is fabulous, seriously! I hate taking a million baggies with my lunch.
All of your meals are perfect for long days on campus! I had a big break last semester and I took some very similar meals, as well as lots of quinoa-black bean & veggie bowls. Bringing your lunch is definitely better than eating on campus all the time!
