3 Healthy Lunch Ideas for Work or Home
I have finally set my schedule for next semester (’bout time) and I’m going to try the whole “go to class mainly on Tuesdays and Thursdays” deal. This will allow me a long weekend and the flexibility to schedule flights and trips Friday-Monday.
However, my first thought was, “If I’m up at campus all day Tuesday/Thursday, what am I going to do for lunch?” I ate at the dining hall during orientation and it didn’t have many dairy-free, vegetarian options. Plus, meal plans can be expensive! With a break in classes from 11:30-1, I figured I’d pack my lunch and find a spot to snack.
For today’s post I’m collaborating with Planetbox to show you 3 healthy, easy lunch ideas for work, school, or home! It’s hard to find things that keep well, can fit well in containers, and are filling. Try out these 3 recipes on your lunch break or just when you want a healthy, filling lunch.
I sauté my veggies and heat up my beans in separate pans. Note: You can use whatever beans and veggies you like, but this is my favorite mixture! Once they were done and on my tortillas, I added pico and lettuce. They’re simple, but so delicious and filling! I included some medium red salsa for dipping. You can pack each of the components of this meal (tortillas, veggies, beans, salsa) into a lunch box and then put your tacos together at your work!
Sweet potato with side Market Salad
For a healthy lunch recipe, it’s best to just stick to the basics and keep it simple. I love sweet potatoes because they’re filling and great for you! You can poke yours with a fork a few times, wrap it in parchment paper, and heat it in the microwave for 8 minutes (sorry if you’re against microwaves – haha) while you have your coffee before work. I dice mine so I can fit it in my lunch box.
Another simple healthy lunch dish is a salad. Often times, we get all bummed about salads because they don’t fill us up! That’s why I pack mine full of healthy fats and veggies to keep me full. I’ll chop up veggies and add an avocado in there. (Note: my salad looks a little wilted here because I had made it for dinner the night before – this was leftover!)
Veggie Tortilla Pizza
When I went dairy free in January 2015 for the sake of my health and skin (bye-bye breakouts!) it really was not that hard for me to give up things like coffee creamer, cheese snacks, and ice cream. The only thing I’ll occasionally crave is pizza! There’s something just so incredibly satisfying about greasy pizza. I’ve taken to making my own healthier version at home. I spread all my desired ingredients (I do a ton of veggies, but you could add cheese, meat, or anything really!) on a whole wheat tortilla. Bake in the oven at 400 for 10-12 min.
I’m really excited to whip up some simple, healthy lunches and transport it in my Planetbox lunch box. I checked and this fits perfectly into my backpack and is lightweight enough that it won’t bug me walking around campus. Plus, since I’m not transporting everything in plastic baggies, this lunch kit is a whole lot less trash and better for the environment! It’s also dishwasher safe which is perfect for someone like me who hates scrubbing my messes out of dishes.
